It is way out of my comfort zone, but as someone who is not much of a reader anyway--and who is very much a talker-- it seems like an appropriate change.<br />

I do really love writing and since starting a blog in 2009, I have enjoyed documenting the different seasons, but writing a blog doesn't bring the same joy it used to. I also don't dedicate the time or resources to building a brand from a blog like so many other wonderful bloggers out there do. When I got married, I quickly learned that blogging every day after work took time away from my husband, so it became a little more of a (non-paying) job than a fun hobby. Don't get me wrong, YouTube surprisingly takes a lot of time too, but for now, seems a better (faster) way to use my time.<br />

Running is totally different. But, years ago, Kelly Ripa took cameras into Soul Cycle, which, at the time, was a new concept. My college bestie, Alex, lives in Boston so we took advantage of our time to workout together. It was like living in the same city again--so much fun! Here are a few things I learned at Soul Cycle for the first time:<br />
<ul>
<li>First, you sign a waiver, get a tour, and cannot take pictures inside the studio.</li>
<li>The clip in shoes are complimentary the first time, but are $3 after that. </li>
<li>The bathroom is heaven in gym terms--deodorant, ponytail holders, razors, and other self care items are available. </li>
<li>Lockers are available for free and have a phone charging port inside (which I learned was a huge deal in Boston since I would pray my phone would make it through the day).</li>
<li>It is <i>very high energy </i> and you do a lot of push ups while biking--new concept to me!</li>
<li>5 songs, weights, then 2 songs, and you're finished. (Never mind that some songs are 6 minutes long). </li>
<li>People wear sports bras and pants. Which, I did too! Totally out of my comfort zone, but thanks to the fact that I packed only long sleeve, winter running gear, I was too hot to care. </li>
<li>Bonus: the lights are super dim so no one notices your sports bra.</li>
<li>Extra bonus: You are so wiped after the session, you could care less about what people are wearing/think!</li>
<li>Downside: it is $30 per class and you need to reserve a spot in advanced (Alex used the app)</li>

<span class="im" style="color: #500050;"><b><i>When did you realize that the demand for paleo/gluten free foods was enough to branch out into a store front and full business? Was it immediate?</i> </b> </span>It wasn't immediate to me. When we decided to make this lifestyle change, I had only ever heard of Paleo from a friend of mine who did Crossfit. I thought it was simply something athletes did--I had no idea that eating this way could provide so many health benefits--especially to those dealing with autoimmune issues. When we took the leap into Paleo, I was very open about it--posting on Facebook and eventually starting a blog. As I began experimenting at home and sharing our successes (health-wise and in the kitchen) more and more people began contacting me to see if I would bake for them. I came to a point where I knew that this lifestyle was gaining momentum and if I didn't open a bakery like this, someone else would, and frankly I couldn't live with that! While I felt Consider it Joy would succeed, I imagined it more as a cozy little bakery with a handful of very dedicated customers. I never thought of it being much more than that. I could have never predicted the growth and popularity that we have experienced.</div>

<span class="im" style="color: #500050;"><b><i>For like minded entrepreneurs, what advice would you give to help them take their idea from just an idea into true business?</i></b> </span></div>

I would say that one of the single most important things I did was to harness the power of social media long before opening. Shortly after making our dietary change, I started a blog and then dedicated Facebook and Instagram pages that I used for posting recipes, pictures, ideas and more. While I had no idea at that time that I would eventually open a business, in a sense, I was already 'meeting' and forming relationships with future customers. On the day we opened, we hadn't advertised anywhere and we didn't even have a sign yet, but through social media, so many people heard about it. I truly only expected family and friends to show up to that "soft opening", yet we nearly sold out the first day and our sales were comparable to what you would expect from an advertised grand opening. We still attribute our rapid growth to word of mouth and the reach that we can achieve using social media.</div>

What was the most challenging part about starting your own business? </i></b></span></div>

The most challenging thing is definitely the massive amount of time you have to put in--especially that first year. I was a full-time mom for most of my kids' lives and suddenly I was pouring nearly every ounce of myself into running this business. That was a huge shift, and without an amazingly supportive family, I just don't know if it would have been possible.<span class="im" style="color: #500050;"><br /><br /><b><i>What part did you find to be easier than you originally thought? </i></b></span></div>

My next answer is going to sound funny considering how I answered the last question. While putting so much time into a business is challenging, it is also the easiest part. I truly love what I do. I love being at my bakery, whether I'm baking muffins, bagging my one millionth bag of granola or washing dishes. When you love something, putting in the time is easy. Almost too easy to the point that it can be consuming--you have to be careful to stay balanced.</div>

The most rewarding part for me is my customers. I always say we have the best customers, and it's true! They always thank us for what we do. They thank us for feeding their families and providing healthy meals that they don't have time to make. Our customers with medical dietary restrictions are able to walk into a store and buy a treat without worrying that it will make them sick--that is something that so many of us take for granted every day. It warms my heart to even be a part of their story.<br />

I began baking Paleo goodies in 2013. My oldest son was dealing with chronic stomach pain and some other health issues. Doctors were not able to provide answers or solutions, so I decided to implement major dietary changes in our household. Because my kids were 6 at the time, I knew it would take some delicious baked goods to get them on board, so I set out to learn. </div>

Meeting my customers' needs was huge--people were asking for it from Day 1. Many people truly want to nourish their families with healthy food, however their hectic work schedules prevent it--or maybe they don't enjoy cooking. Sometimes people come to our shop looking for meals to take to a friend or family member with dietary restrictions. Sometimes it is overwhelming to cook for someone with many restrictions and it is easier to know that at Consider it Joy, we have that covered.</div>

I really just think about what I liked to eat pre-Paleo and try to recreate those old favorites. I love to change our menu seasonally to reflect the weather or different holidays. Many of us have special memories we associate with certain foods like pumpkin pie or even S'mores. So I start there and work to recreate those items in a way that even non-Paleo people would enjoy.</div>

I think a lifestyle change like this can be accomplished in many ways, and a lot of times it depends on the temperament of the person. If someone is feeling overwhelmed, I often tell them to take it one meal at a time. For instance, if you are going Paleo, perhaps start with making a compliant dinner every night. You'll need a protein and 2 vegetables. Get comfortable with that. Experiment a bit. Then start working on your breakfasts, etc. Some people prefer to go cold turkey and that's fine too. Remember the reasons you are making these changes. Get your family involved. If you don't have friends around you that are interested, find a support group online! </div>

Going gluten-free is overwhelming to anyone at first. Gluten can hide under a variety of names and reading ingredient lists is time consuming and confusing! My best advice is to stick to the perimeter of the grocery store. Meat, eggs, fresh fruits and vegetables--there are no hidden ingredients when your food doesn't come from a box. For those on a budget, I would recommend shopping at ALDI or Sprouts to find great deals on produce, or if it is possible, joining Costco to take advantage of bulk pricing. While organic and grassfed are optimal, they are not required, and any fresh meat and vegetables are better than fast food or boxed alternatives.</div>

Whole grains are so important thanks to fiber and protein (the two things that help keep us fuller longer). Adults need around 35g of fiber each day and we typically get around 11g. I thought vacation would be the best time to toss some fun, new whole grains into my home-made granola bars for a fiber packed snack. I don’t buy grocery store granola bars because they are typically high in sugar and don’t keep me full very long. I had pretty much nixed granola and bars all together but since trying my friend, Kathleen’s, granola bars, I have been enjoying them as convenient on-the- go snacks. <li>Line an 8x8 baking dish with parchment paper and set aside. (A loaf pan also works, but will make fewer, thicker bars).</li>
<li>Using a food processor (or Ninja blender) mix raisins and peanuts until well combined and forms somewhat of a paste.</li>
<li>To the food processor bowl, add the peanut butter, honey, oats, and chia seeds. Pulse until all ingredients are mixed well.</li>
<li>Add chocolate chips and stir them in. Transfer mixture into the baking dish and spread out evenly.</li>
<li>Freeze for about 30 minutes to 1 hour before cutting. Cut them into whatever bar shape you like! Store these bars in an air tight container in the freezer for best results. They may also be kept in the refrigerator but they don't do well on the counter top!</li>

Rarely do I actually like pre-mixed protein shakes. I much prefer to mix up my own...until I tried the<a href="https://www.organicvalley.coop/products/protein-shakes/organic-fuel/chocolate-organic-fuel-protein-shake/"> Organic Valley Organic Fuel protein shake. </a>The vanilla was my favorite, naturally, since it tasted like a melted milkshake. I love how fast, low maintenance, and versatile protein shakes can be. Plus, they really have fullness staying power and last right through midmorning snack time!<br />

The only con I found was that there are a few more grams of sugar (27g) than I usually like, but some sugar is expected since they contain lactose (milk sugar). If you prefer lower added sugar like me, they do have a lower calorie version <a href="https://www.organicvalley.coop/products/protein-shakes/organic-balance/dark-chocolate-organic-balance-protein-shake/">(Organic Balance) </a>and would be more appropriate for post workout snacks or any-time snacks!<br />

Generally, toddlers have a pretty good way of regulating their own appetites by listening to hunger cues. It's us adults, that mess it up for them! To keep them from getting overly hungry, or overly full and not eating meals, check out these tips!<br />
<br />
<b>1) Schedule meal and snack times. </b><br />
I realize life happens and this isn't always possible, but for the most part, toddlers need a routine. They find comfort in knowing that you are regularly going to offer snacks and meals. According to <a href="http://ellynsatterinstitute.org/dor/divisionofresponsibilityinfeeding.php">Ellen Satter</a>, there is a division of responsibility in feeding. The parent is responsible for the <b><i>what, when , and where of eating.</i></b> The child then, is responsible for<i><b> how much, and whether or not they are going to eat.</b></i> If they decide they aren't hungry for lunch, no big deal since you have a snack scheduled in 2 hours. The hardest part of that is making sure you don't give in when they come to you hungry for fruit loops when they didn't want what you originally offered. <br />
<b><br /></b>
<b>2) Offer healthy choices and let the child decide.</b><br />
Another difficult point in the division of responsibility is that, if the child is responsible for <i>how much, </i>the parent must take the <i>what </i>seriously. If the parent is offering ice cream for snack, the child should be less responsible for the <i>how much </i>than if the parent were offering grapes or a vegetable. Parents must take responsibility for healthy options. There should be no such thing as kid food. This eventually becomes adult food. "Do you want carrots or celery?" Either way, the parent is offering good foods that are equally nutrtious. The child then gets some control in deciding which one, but he does not feel overwhelmed with choosing from all possible items in the refrigerator.<br />
<br />
<b>3) "You don't have to eat it"</b><br />
I recently read a really great article about making meal time less stressful. The truth is kid, you don't <i>have </i>to eat it. Why? Because, as a parent, I will give you another option for a snack in about 2 hours. So, no, you don't have to eat it, but you will have no other chances until snack time. Sometimes, they are hungry, but want some control as this is an age where they are testing parents a lot! By giving kids the choice, you are loosening the food control grip and most toddlers respond better when they are free to make up their own mind.<br />
<b><br /></b>
<b>4) No grazing. </b><br />
When toddlers are free to eat whenever and wherever they want, one of two things usually happens (generally, there are always exceptions):<br />
<br />
<ol>
<li> They are underweight because they end up carrying a handful of Cheerios around all day and eventually drop them all in the sofa. </li>
<li>They are overweight because they choose high calorie junk foods like chips or cookies that are always more appealing than more nutritious option, and are definitely enticing even if they aren't hungry.</li>
</ol>
<div>
This can be really hard in the beginning if your toddler is used to nibbling all day, but if parents are consistent and patient, kids typically come around in a week or two (typically...).</div>
<div>
<b><br /></b></div>
<div>
<b>5) No sugary drinks.</b></div>
<div>
The main fuel source for the brain is sugar. Drinks such as soda, juice, and tea that are full of sugar (whether natural or not) often send a signal to the brain telling the brain it's satisfied. With toddlers, who are already more interested in playing than eating, once they <i>feel full </i>they are no longer interested in patiently sitting at the dinner table. </div>

Say something like "Do you want grilled chicken nuggets and fries or fried chicken nuggets and fruit?" to make them think they ultimately get to decide. So you want ice cream? "Ok, then you need grilled chicken nuggets and fruit, then you may have ice cream." </span></div>

I typically find bread to be high in preservatives and low in fiber and protein, so it is not a staple in our kitchen; especially white bread. J.T. on the other hand, was thrilled (grilled cheese on white bread, anyone?)!</div>

My favorite running buddy, Kathleen, (plus my favorite supporter, JT) and I were at it again this weekend. We have completed four half marathons together. Kathleen has me beat by one that she ran in Savannah solo this past fall. We first ran and finished the Mercedes Half in Birmingham, Alabama two years ago as our second race. Our first was in Gatlinburg for the Santa Hustle and our most enjoyable one was the Seaside School Half in Florida last Spring. The weather was simply amazing! We opted to do the Mercedes again this year because I am getting married and couldn't commit to a weekend of travel, so Kathleen graciously agreed to stay local with me. The Mercedes race is a pretty big deal. It's a Boston qualifying race so people come from all over the world to run. It's always fun, but we are already talking about our next one since seeing new cities by running is one of our favorite things to do!<br />

This half marathon was our slowest yet at a 2 hour and 7 minute time. There are quite a few reasons why we finished in more time than our previous runs. We did stop at water stops and we took a restroom break around mile 8. Both of those really add up when seconds count in a race. However, we were both really relaxed for this race and enjoyed jogging and talking. It seems I have lost my competitive streak in my old age, just kidding...I did squats at the gym two days before the half and boy, was that a <i>huge </i>mistake. The tops of my quads ached from working them out just two days before so it made my running stride a little off which resulted in more pressure on different parts of my calves and feet than I am used to. Needless to say, they ached more in this race than the previous ones and I will be forever reminded not to try a<i> new workout routine </i>two days before a long race. Lesson learned, friends. Overall, another successful Mercedes Half Marathon! I did get the post race message for the first time and it made my legs instantly 25% better! You can probably find me in that post race line from here on out. I would definitely recommend trying it.<br />

After the half, we met J.T.'s family and friends at the bowling alley to celebrate his dad, Frankie's, birthday. Bowling is not my sport, but Frankie, J.T. and the other guys were pretty good! We even got to see Gracie...she was the cutest one there, but she's not a fan of the bowling alley.<br />

<li id="yui_3_17_2_3_1454028630987_2482">Using a medium skillet, saute the Italian sausage. It should easily crumble. Set aside.</li>
<li id="yui_3_17_2_3_1454028630987_2506">In a medium stock pot, saute the turkey bacon. When it is halfway cooked, add diced onions and garlic and continue to saute until onions are translucent/tender (about 5 minutes).</li>
<li id="yui_3_17_2_3_1454028630987_2504">Add the 8 cups of chicken broth and the 2 cups of water. Bring to a boil.</li>
<li id="yui_3_17_2_3_1454028630987_2502">Reduce heat to medium and stir in the potatoes. Cover and cook for about 30 minutes (until potatoes are soft). </li>
<li id="yui_3_17_2_3_1454028630987_2500">Add the 1% milk and the sausage, cook for about 5 minutes.</li>

Then, after spending way too much time comparing coupon savings with generic brand prices, I took my envelope filled with coupons to the checkout and ended up saving $5... I gave up.<br />

That was before I found Ibotta. It is an app that allows you to look through and "unlock" coupons you would use. Instead of saving a bunch of coupons for things I don't ever buy, I skipped around to things I <i>may buy. </i>I typically go for the generic brands for dish washer detergent and household items, but the more I thought about it, the more I realized my dishes are really never that clean...Maybe it won't hurt to buy name-brand, I thought...then I saw $1.00 coupon which made the price the same as the generic anyway. It was a typical sunny afternoon and Virginia, Kathleen, and I were running our usual 4 mile route when I disclosed to the group that a goal of mine was to run a marathon before I turned 30. In my usual procrastinator style, I was fully prepared to start training when I turned 29, but Virginia chimed in with "well I'll do it with you". Kathleen (after some debate) agreed and then went on to find a marathon for us to do together. After searching for an affordable one, without a lot of travel, she signed up for Mobile, Alabama since her sister is moving there and already has a house.<br />

Virginia and I weren't completely sold...in my typical, selfish manner I told the girls I only wanted to do one marathon my whole life, so I want it to be fast and in a cool city. I kind of go all or nothing in my mind most of the time so I wanted to work on my speed <i>and </i>distance until one day, Virginia (who had actually done a full marathon before) said something along the lines of "26.2 miles is so hard, it would be better to have friends with you than to do it on your own". Have I mentioned that she's a kind and loving voice of reason? So, it took me a while to be fully on board and sign up too (after we already started long runs), but I am so glad I took her advice and did it with friends.<br />

Kathleen hurt her leg in the first few long runs so she stuck with the half marathon instead of the full. If you're a runner, you know the discipline it takes to take the Doctor's "rest" advice is harder than training (mentally and physically)! Kathleen deserves a shout out for how well she handled this set back. She was smart and followed all the advice given to her and included her daily stretches and came out on top without a lasting injury. </div>

For Virginia and me, we continued past the 15 mile runs on to complete an 18 mile run, then a 20 mile run. At the 18 mile run mark, it was the longest I had ever run and mile 17-18 was downright hard. Then, we set out to do a 20 mile run and mile 18 came and went easily--it was mile 19-20 that was so hard I kept asking Virginia <i>how much longer?? </i> During the full marathon, I fully expected mile 20 to be the hardest because, so far, it seemed the hardest mile was the 20th, but what I found is that the hardest mile is the last.</div>

No matter what distance you are running, that last mile is when you need encouraging words and thoughts because at 25 miles, <i>everything hurts. </i>Like, I could literally feel every rock on the pavement with each step. Instead of talking about how my muscles ached, my feet were sore, and my knees may buckle any moment, we stayed positive. Virginia and I kept saying "this is so easy, so easy", which would make us laugh and take our mind off of how <i>not easy </i>it actually was.<br />

Our pace was pretty consistent because if Virginia felt like walking I would say "no we can do this, let's go!" and if I felt like walking, she returned the favor. Having a buddy helps to keep you going when you don't want to! Mile 23 was one of our slowest even though we felt like we were going pretty fast. It was around a 10 minute mile, and our pace had been 9:15-9:30 minutes per mile with a faster one being a 9 minute mile. Then, at mile 25, Kathleen joined us to run the last mile to keep our spirits up. She felt bad about crossing the finish line when she didn't run the full but we talked her into joining us because our running trio has not been the same since she's been out. Plus, as mentioned above, the girl is dedicated and would be right there with us if she wasn't hurt. We devised a plan was to have Taylor Swift's music going and Kathleen's comedic relief to help us make it through the last mile. Let me tell you, that helped so much! We are convinced T. Swift is a runner because all of a sudden "lightning on my feet" and "Can't stop, won't stop grooving" became hilarious sentences that were speaking the truth to us and our mile pace picked up to a 9:30 minutes per mile at mile 25. </div>

Our goal was to complete the marathon by 4 hours and 15 minutes and we did it! Our overall time was 4 hours and 13 minutes!</div>

Remember how I said I only wanted to do one marathon in my whole life? I was wrong, but right now I'm too sore to think about that. </div>

We have to continuously adjust and plan to make healthy choices, time to exercise, and to think positive thoughts. Excuses are easy, discipline is tough. I literally remind myself that my body is my slave. It is the vehicle I use to reach others. This life is about serving others, but we can't do that if we don't cherish and care for the vehicle God gave us to serve with. When I'm tired and don't want to clean, cook, exercise, or take time for someone else, I do it anyway-- because strong people tolerate discomfort. It makes my sleep and downtime that much more enjoyable, anyway! Excuses are easy, making your body a slave is the hard part. Think you don't have time? I know you're busy, we all are. But I always stop myself before I tell people I am "busy", because, so are you! We all have time for what we make time for. Excuses hold you back from reaching your full potential. Be your potential!</div>

We all have discipline, we just need to apply it to every aspect of life. Take that same discipline and get up early to clean, read the bible, or run before work. Don't be discouraged if no one notices. Even if people don't give you credit, you are doing it for a much bigger prize.</div>

<strong>2) M</strong><strong>otivation</strong>- comes after you get started. A lot of people say they "lack" the motivation to start something. But really, motivation only comes after you have the discipline to start. Motivation comes when you see what you started is working for you. You see changes and those changes are what motivate you to keep going. I have had many successful weight loss clients tell me they never really felt motivated until they simply started.</div>

Keep the discipline, keep the motivation, and find the persistence to make your body your slave so that you can use it as your vehicle to serve the world. </div>

As soon as the holidays start, I start with seasonal coffee drinks. Last year I discovered sugar free Peppermint Mocha from Starbucks and proceeded to buy the creamer from the store in an effort to replicate it at home. This year, as the barista was making it, I noticed they make their own mocha sauce and since I am equal parts cheap and DIY, I decided to try my hand at my own.</div>

Virginia told me it was better than the store bought creamer, but I thought she was just being nice. Then, my friend Lauren, told me the same. In fact, Lauren bought the store bought creamer and brought it to work to share with others since she didn't care for it. So, around 2 pm coffee was needed and I went to try the store bought kind. To my surprise, they weren't just being nice! My version really is better! Not to mention, less chemicals and sugar! I do use Splenda because it is the most heat stable meaning, when heated, it holds it's sweetness. You could add real sugar if you want but if we are being honest, we all eat enough sugar--there's no need to add it to your coffee (especially if you drink as much coffee as I do!). Overall, this is a sugar free yet delicious coffee creamer without hydrogenated oils and extra preserving chemicals.</div>

<b><u>Peppermint Mocha Coffee Creamer</u></b></div>

<b><i>Ingredients:</i></b></div>

<li>2 cups 1% milk</li>
<li>1 tablespoon Splenda (or other sweetener; be sure it is a heat stable one)</li>
<li>2 heaping tablespoons Cocoa powder</li>
<li>1 tablespoon Peppermint extract</li>
<li>1/2 tablespoon vanilla extract</li>
</ul>

<b><i>Directions:</i></b></div>

<ol>
<li>In a medium saucepan, heat milk over medium/low heat until steaming. Be careful, once it reaches boiling point it overflows really fast!</li>
<li>Once the milk is steaming and just before it starts to boil, remove from heat. Turn off stove. </li>
<li>Add all other ingredients and mix well until cocoa is dissolved. </li>
<li>Pour some immediately into your coffee and let the rest cool. </li>
<li>Once cooled, store in an airtight container for up to 1 week. *I think, mine never makes it to the whole week mark!</li>
</ol>

This also makes a delicious peppermint hot chocolate that I thoroughly enjoyed while watching Elf last Saturday night. </div>

Before we start, you must know, this was solely his idea! I told him I was signing up for the Region's Jingle Bell Run because Kathleen recruited a bunch of clinic coworkers to walk it together so I was going to join them for support. Until, J.T. decided he wanted to run.<br />

He even recruited his friend, Whitworth (who runs 5k's on a regular basis, apparently). So, J.T. and Whitworth decide to run 3.1 miles and start "training" 2 weeks before the race. Whitworth ran 1 mile runs like 2 times and lost 7 pounds. Seriously?! I mean, I run like 13 miles in one day and don't lose a single ounce. Off topic, back to the race. J.T. ran just about daily for the 2 weeks. I ran with them once and found $11 in cash on the sidewalk so really everyone benefitted from this.</div>

Raceday comes and Whitworth met at our loft early so we could all walk over. So, really, we had a five mile kinda day. We met up with another Clinnut, Jennifer and her husband, Holt.<br />

J.T. and Whitworth all started out pretty strong. My Nike watch broke long ago so I don't have any pacer for us but I asked a girl beside us who reported we were running an 8:42 average. Pretty good! When I run with the Be Well girls, we average around 9:15 minute miles depending on the distance so running with boys made it significantly faster. We lost a teammate around mile 1 so J.T. and I kept running. We walked a few times but overall, I was super impressed with these guys who only trained with a couple of runs. I feel like it took me months to train when I first started running and these guys just dove in head first (and lost weight in the process). That's a boy for ya.</div>

Sunday afternoon we went to <a href="http://pinehillfarms.vpweb.com/">Pine Hill Farms in Tarrant, Alabama </a>to look for the perfect Christmas tree. Until recent years, my family has always done a real tree so it is a tradition I wanted to keep for J.T. and me. Since this is our first married Christmas, we wanted to go find and cut our very own tree. </div>

I asked the lady in front of us to grab a picture for me with my camera; she agreed, but was having trouble. So I left the photo to show her how to work the camera and accidentally took a picture. When I got back to the car, I was going through the pictures and realized JT had unintentionally perfectly posed alone with Santa while I was helping the lady with the camera. It resulted in a hilariously, perfectly timed, photo that appears as if it were planned. I mean, look at JT's smile! Santa looks a bit worried since he was telling me to hold the button down. I couldn't resist sharing it--it took a lot of convincing. </div>

What we didn't find was a tree. I guess people go really early and pay for trees to be chopped later? It's the only rational we could come up with since there were hardly any large trees left and it's only the first weekend of December. Next year, we will check earlier!</div>

I have been following P31 ministries for a while and was so happy to learn they had a devotional app that is not super lengthy. Today is the first day back in the real world for me after a full 9 days off! It started with a 4 mile run with Rainie (VA is still out of town). It was kinda rainy but I didn't really notice it as we had so much to chat about. With my leg injury and then Thanksgiving it had be almost 3 weeks since I ran with Rainie! Words cant describe how much I missed it either! Running with Rainie and VA is by far my favorite exercise and one of the best ways to start my day.<br />

As I mentioned, my family went to Asheville for the Thanksgiving, and we had a fun filled week in the mountains, and when I say filled I really mean stuffed! My mother should have been a travel agent and she always has our family vacations packed with fun activities. I will make a whole post on the top things to do in Asheville, but I think one of our favorite activities was visiting the Biltmore.<br />

So here is a summary of how the West Family did <a href="http://www.biltmore.com/visit/biltmore-house-gardens/biltmore-house">The Biltmore Estates. </a><br />

The Biltmore was the home (completed in 1895) of George and Edith Vanderbuilt. Unlike a lot of historic homes throughout the U.S. the Biltmore is still family owned vs. run by the Historical Society, which I thought was pretty neat.<br />

We arrived at the Biltmore Estates at 9am. We pull into the property and give our tickets to the men at the guards desk. We then drive down the 2 mile driveway, yes you read that right, a 2 mile driveway. We then parked in a parking lot and had about a 5-10 minute walk to the house. They offer a shuttle which would be nice for the elderly, but there was no way I was letting my family take the shuttle, gotta get all the steps :)<br />

We walked in to the front of the house, and a nice lady handed us our headsets. We then started on our self paced tour. In each room there was a number and we just simply pressed the number on our audio piece and we could listen to a summary about what that room was used for, why it was decorated that way, and any other historical facts about that room. You can also opt for just entrance to the Biltmore without the audio piece but I think the audio is necessary. I think you get 1000x more information, history and detail with the audio addition. It was definitely worth the additional $20.00. there is not too many signs or labels to read around the house while you are walking through, there is a simple book that has a blurb about each room but in my opinion it does not compare.<br />

The tour takes you through the basement and 3 floors of the house. The house has everything from a bowling alley, indoor swimming pool, to a gym, 12+ guest bedrooms and over 65 fireplaces! </div>

It took us about ~2 hours to go through the house. We took our time but I don't felt like we moved too slow, the house it just that huge!<br />

After we were done touring the house we walked around the gift shops. They have a couple standard gift shops and a few Christmas ones as well since its the Holiday season. <br />

Then Kelly and I split 50/50 the Bison Burger and Lentil Burger. Both were amazing! I have never had bison before but it tasted to me just like a typical beef burger. It came with caramelized onions on it so you really can't mess it up! It also had lettuce, tomato, and swiss cheese. It came with a cherry dijonaise as well, which was different but delicious.<br />

The gardens were huge and they also had a few greenhouses as well. The only things blooming right now were in the greenhouses, there was not much to see outside but the landscape but it was still pretty. I bet in the spring time the gardens would be even prettier!<br />

After we walked around the gardens we walked back to the car to drive the 5 miles to the back of the property where the <a href="http://www.biltmore.com/visit/village-winery">winery</a> is. </div>

They have tours every 1/2 hour, all free, included with ticket admission. After the tour we got to the best part, the tasting! We all pulled walked up to the bar and the lady letting us sample all the wine (bar tender?), name was Lorraine and she was hilarious. My dad may or may not have invited her to Thanksgiving by the end of it :) </div>

You can sample as much wine as you like, and we sampled just about all of them. I tend to lean more towards the sweeter wines, however I feel my taste is maturing some and I enjoyed some of the more dryer wines as well. They had a Christmas Red out which was semi-sweet which was great. </div>

After we toured the winery, tasted all the wine, then bought all the wine out of the gift shop we went for our final stop at the Biltmore for the day, the history museum.<br />

This was a small little museum/exhibit which took us about 30-45 minutes to go through. It had a nice family tree out front which for visual learners like me made it a lot easier for me to understand the Vanderbilt/Cecil family connections. There was also a video of the history of Biltmore as well which was nice. It was a great way to sum up all the history we learned at the house earlier that day. </div>

That wrapped up our day at the Biltmore, we were all exhausted so we headed back to the cabin for dinner and to enjoy some of the wine!<br />

You can also stay on the Biltmore property, they have new hotels. Since we are a family of 7 needed more of a house to live in for the week not a room so we opted not to do that but they sure looked nice! There is also some more <a href="http://www.biltmore.com/visit/things-to-do/outdoor-activities">outdoor activities</a> you can do (most of which were closed for winter currently), ride horses on their land/stables, go fishing, biking, carriage rides, segway tours, and river float trips.<br />
<br />
You can easily make the visit to the Biltmore into more than one day, there is a lot of different things to do! We did all we wanted to do there in one full day but it really just depends on what you want to do on how much time you should spend there. No matter if you want to spend half a day or a week there I would definitely recommend a visit if you ever are near the Asheville area! </div>

Tuesday, Virginia and I started with a downtown run. This picture is from our long run last Saturday, but it was too fall-ish not to post and we forgot to snap one Tuesday. We have been training for a full marathon and are really surprised at how much easier each run gets. The first half marathon I did resulted in foot pain thanks to the wrong shoes, the second one was freezing, and the third was pretty great. But even then, I was super sore after each run...now, I am not even really sore after a 14+ mile run. Anyone else feel that way? I am probably speaking too soon since I haven't hit mile 17 or 20 yet and I hear those are doozies! But I sure do love my running buddies!</div>

For snack, always eaten at the 3:30 timeslot to prevent over eating when I get home, was an apple with a string cheese. I stayed a little late Tuesday because I was meeting my husband for our first serving project as a married couple. Our premarital counselors always told us how important it is to serve together so we met at home to go over to Glenn Iris Church. </div>

Glenn Iris has a Thanksgiving dinner for the different homes in the area and it is a huge ordeal! Thousands of people come to watch a movie about Christ, eat, and have fellowship with others. I first learned about three years ago when Jana, a CDE at work with me, was the chairperson. She was trying to recruit servers and told us to come by. The first year, I didn't realize how big it was so I just went with a few work friends, but the next year, the entire Clinnnut group came to help! Jana no longer works with me so the dinner crept up on me this year so it was down to JT and me. </div>

Meet Paul! A few years ago, I went to Planet Fitness in Hoover and Paul would be there, each morning at 5:30 a.m. on the same bike. I don't remember the day, but we just started chatting and from then on we pretty much rode bikes side by side 3 days a week. I randomly saw him at Glenn Iris the first year and then the second so I wondered if he would be there this year and he was! Paul is so friendly and super easy to talk to! We caught up on life changes, he met J.T. and I enjoyed hearing how our other gym friends are doing.<br />

The buses of people start arriving and food is served from 6-8p.m. This church has such a system going and these people plan all year long! Some food is donated, but some is made by the kitchen ladies, and it is <i>a lot of food</i>! I am in awe of the work and organization that goes on with this dinner. The guests are first required to watch a video about Jesus Christ, then, their group goes into the dining room to eat dinner and dessert before the next wave of guests comes in.<br />

I really enjoy doing things like this, but largely for selfish reasons. Sure, I like to see them getting to enjoy dinner but really, I feel better and more energized when I serve others, and I'm not alone. Research shows that people who serve are happier people. Plus, coming from a town where everyone already knows you, a bigger city like Birmingham can seem just that -- big! So, I try to take advantage of opportunities that can help make us feel like we are part of a community. Work has been the biggest game changer for me and I know I am so blessed in that my work friends have become some of my best friends! The YMCA is another place where I felt super awkward walking into it the first day, but now I see familiar faces each Wednesday and Thursday morning! Finally, Church of the Highlands has been something that makes us feel like we are part of Birmingham. I am excited to add this yearly Thanksgiving tradition to the list of things that makes us feel at home here. Which is good, because we kinda like Birmingham:)<br />

Five years ago, JT and I wouldn't have seen ourselves eating this for dinner. Before college, I didn't even like Hibachi type foods (read: I had never really had it) but JT loved it so I gave in and eventually, it became one of my favorites too!</div>

<li>2 tablespoons water</li>
<li>2 tablespoons ginger</li>
<li>2 sticks celery</li>
<li>2 tablespoons ketchup</li>
<li>1.5 tablespoons soy sauce</li>
<li>1 teaspoon Splenda (or sugar)</li>
<li>1/2 teaspoon garlic</li>
<li>1/2 teaspoon salt</li>
<li>pinch ground black pepper</li>
</ul>
